Welcome to the Shoun RyuGin Website.
As a sister restaurant of RyuGin Japan, Shoun RyuGin strives to create a memorable dining experience based on the Tokyo restaurant but one that is unique and features the richness of Taiwan’s local ingredients.
Seasonal menus overseen by founder chef Seiji Yamamoto are prepared under the supervision of chef de cuisine Ryohei Hieda. We combine seasonal ingredients flown daily from Japan with the abundance of quality products that Taiwan boasts to offer a traditional and unique Kaiseki cuisine.
The origin of our name "RyuGin" comes from the words of "Zen", and is derived from "龍吟雲起（RyuGin-Unki）".
During Chef Seiji Yamamoto’s training, he came across a book of “Zen” and within it, a hidden meaning of "龍吟雲起（RyuGin-Unki）"...
"When a heroic person makes a decision and takes action, his comrades will mutually resonate and gather there..."
That lesson moved his heart, and made him decide on the name of his restaurant.
So, we will guide the inside of RyuGin.
